To anyone that is celebrating thanksgiving this weekend in Canada!! Happy Thanksgiving. My family is doing a potluck style dinner and this morning the hubby and I made a green bean casserole with mushrooms and a homemade mozza macaroni and cheese topped with bacon and then baked. Usually my family makes mashed potatoes with raw onions (yuck) and other random veggies, so it will be a nice change to have these 2 dishes I made.

I made this recipe for dinner tonight and the idea came from my head!!
What I used:
4 medium white potatoes thinly sliced
1 can of mushroom soup
6 slices of turkey bacon cut with scissors and fried till brown
3/4 can of water but next time I would use 1/2 can
Italian Seasoning, seasoning salt and pepper
Non stick spray
Scrub up your potatoes and leave the skin on if you choose, thinly slice them and layer them inside the casserole dish that you previously sprayed with non stick spray.
Fry up your already pre cut turkey bacon – 6 slices
Mix your mushroom soup in a bowl with 1/2 a can of water or milk what ever you prefer, I used water. add cooked bacon and dump over top of the potatoes in the casserole dish.
Then top with shredded cheese and add italian seasoning and salt and pepper.
Bake at 350 for 1.5 hours covered then remove cover and put more cheese and continue to bake another half hour at 350 uncovered. Allow potatoes to sit and thicken 10 – 15 minutes and to cool
This recipe would easily serve 4-6 people as a side dish.
I never thought cream fitted pants (or taupe if you want to get technical) would give me a self confidence reality check. I wore a pair of winter leggings on monday that were a little more fitted ok, they were a higher waisted pant that was cream and I didn’t need to wear a long shirt persay to cover my butt cause the fabric was thick enough to cover what I needed to.. aka no panty see through here. Well I put them on and thought ok now I can wear shorter tops, I tried them on and they looked ok, but all I could think of is I can’t wear this to school people are going to judge how fitted everything is. Ok we all know by now that I struggle with my weight I am not huge but I am curvy. So I finally found a shirt I felt ok in and I went on my merry way to school. Well when I went through the drive thru at starbucks I thought for sure, she must be thinking why am I ordering a grande pumpkin spice latte a tall would be better for me seeings how she can see how fitted my cream pants are RIGHT?!!?! OF COURSE NOT she probably didnt even think about my pants seeings how I was seated in my car and my chub hung over anything she might be able to see of my pants RIGHT?? well this started the day of wonky thoughts in my head. After I came out of marketing class a girl looked me up from foot to head yes not head to toe like normal, well this made me go crazy in my head and I wanted to scream WHAT ARE YOU LOOKING AT FAT ASS? lol ok she wasn’t fat but at least I would have called her that before she called me it RIGHT? I didn’t have a full day in these pants just till I got home and changed, but let me tell you while I walked to my car I was hanging onto the bottom of my shirt making sure it didnt creap up past my waist to reveal any lumps and bumps. The pants will make there appearance again in the future as soon as my self confidence realizes I need to just wear them and rock it cause I am awesome like that…..

So as you all know from my life lately update, I am working at the accounting firm part time, well today I had miss skinny minnie pants pop into my office and tell me that there is a groupon for curves drop in for like 20 of them for like 20 bucks or something, so I kinda played stupid just to see where this would go, I said oh yea I saw that one. She kinda looked at me like and??? I was thinking you cant possibly be telling me you are thinking of going, so are you recommending I should jump on this super awesome opportunity, umm no thank you. I actually joined curves back in 2005, for those that aren’t familar you stand in a circle in a big room and on one mat you dance in a spot or jog then when the music changes you move to a machine and go hard till the music changes, rinse repeat lol ok ok its move and do it all over again till you finish the circut. Wala you have an easy 30 minutes. I procceded to tell her that it for me was repetetive and I didn’t ever think of rejoining, she said for herself she needs to be told what to do. I was thinking Im still confused here are you recommending I go, are you thinking of going, or are you looking for a buddy to go? or are you calling me fat and telling me to get my ass there lol.. anyhow the convo didn’t go much further then that, I just smiled and was polite and shared my experience, and she listened and smiled.. I just let it roll off my back, normally I would have taken offense to this and probably would have felt horrible about myself then ate something really shitty, but I didn’t think twice about it besides that I wanted to share it here. So there is my umm … are you telling me I am fat story…

It seems like its been a while since I shared a little about me and whats going on in my life. So here is my life lately. I will start with this blog! As you notice there is a new recipes section, this last year I have gotten more into cooking and really love sharing my recipes or ones I have tried on other sites or tweaked in some sort of way. This summer I had a lot of time to be able to blog m-f and got a few more followers, but that isn’t what this blog is about, its just really a place for me to come and share with who ever wants to read it. This summer I worked for the government and when I got the interview and the offer I was ecstatic because I thought this could be the start of something really awesome career wise, because I had always had the assumption that its hard to get into the govt well after my summer there I have no desire for that to be my life long career path after school. I ended up being underutilized, and thrown into a lot of situations where I covered for other people while acting managers screwed the pooch and sat around surfing the internet most days because they didn’t want to train me on anything. I was an administrative assistant which I do have experience doing. Anyhow currently I am back at the accounting firm I left before I started school working on a project for them for the next 4-6 weeks, so that is nice because of the extra cash and I can make my own hours and its decent money, not minimum wage or anything. I also am in school m-f until noon, currently I am taking organizational behavior, marketing, microeconomics and financial accounting. I am really struggling with micro, I just don’t get it. Accounting I am doing well at, and my other 2 classes are fun. I think the OB (organizational behavior) has come at a really good time. These last month or 2 I have been on a emotional journey to try and overcome the deeper reasons on why I really struggle to lose weight. Usually people have a deeper rooted issue and I am discovering mine. It has lead me to be very open with my husband, which is good because he is great at helping keep me grounded and at helping me find the best in myself. It has left me very vulnerable and very emotional. There are times when I just want to cry because I have discovered something that I really don’t like about my surroundings and its yet another thing to try and fix about my self. I am not depressed or hateful of myself. I am digging deep into soul to really figure out some issues that I can work on to make myself better. I definately have learned that I have some very toxic people that surround my life. I am learning that I do not have a lot of self confidence, I have a problem with trust and I tend to judge others or think things in my head that aren’t so nice. I have even shared these thoughts with my husband, I know he will not judge me but stand beside me and help me to overcome all of these things. Anyhow this post has become really long. Life for me is about developing a focus and learning to put myself first, focus on my relationship with my wonderful hubby (woohoo almost married a year), finish my first year of business school and work on eating clean and being active. These are things I want to focus on. I have also disconnected myself from facebook. I don’t want to focus on that, I feel I check it like 15 times a day. Who needs that. I need to surround myself with things that feed me energy not suck it outta me.

You must be thinking what are cucumber noodles!!!?!?! well I created them with my Spirale Slicer you can see a previous post here where I used it to make zoodles which are zucchini noodles. I used the cucumbers in place of lettuce because its what I had on hand and was really craving a taco salad.
What I used for 2 people:
1 large garden cucumber
2 bags of snack size dorito chips crunched up one for each of us
1 medium tomato
light sour cream
feta or tex mex shredded cheese by kraft
1 pack of taco seasoning I only used a quarter of it
1 pack of turkey
I started by spiraling my cucumbers into noodles, 1 large cucumber was enough for both of us. Then I browned my turkey and added the 1/4 pack of taco seasoning with a little water to let it simmer. I cut up my avocado, and tomato. Once this is all done let the layering begin!

I did have to drain my cucumber noodles a few times because they did release some water while I was preparing the turkey. Hope you find time to try this!
What you will need for 1 person serving:
1 medium tomato
kraft classic herb dressing
basil (I didnt use fresh)
Cut up your tomato to your desired thickness, add the rest of the ingredients to your liking, I didn’t measure any of them. I usually start off with less dressing because this dish doesn’t absorb the dressing so you might end up with a pool at the bottom if you put to much in! I have had this salad 3 times this week alone. I even put it ontop of my cooked chicken breast to act as a brushetta and it was delicious! Hope you enjoy!!
